When doing a 'professional' shoot, like at a mechanics shop, dental, hospital, construction... anything, I like to have a person who actually works in that profession on the shoot.  That person (who often also runs the place we are shooting in) is used to make the sure models are acting in a believable way.  That the equipment is used properly and that we are doing things that are actually done in the location.

So my questions is... what is that 'professional consultant' called? .. I need a good name for it, or perhaps there is already a name for that person on a shoot.. anyone know?

In England its called a Production-assistant. Was a common "help" during the film era for both advertising-agencies and commercial photographers. Special knowledge in certain fields, such as medicin, surgery, etc, and as you say: made sure the scenes were authentic and belieavable. :)

I have someone on set who I call the production assistant but that is the person who has helped me find the models, locations, welcomes the models, helps carry cameras, stands and watches out for logos etc.

I like Technical advisor and feel the wiki page describes that position well.  I also like the sound of it.
http://en.wikipedia.org/wiki/Technical_advisor

I feel SME sounds a little 'made up' but it has a wiki page too
http://en.wikipedia.org/wiki/Subject-matter_expert
it feels a little more like the 'knowledgeable person on a team' doing a project ... like who is the SME for chocolate chips at the bakery.. oh.. that's Sean - he went to the chocolate chip conference last month.

I think perhaps I'll use TA or Technical Adviser.

Technical advisor is fine however, a technical-advisor ( in England) is a technician who is an expert in studio-setups and lighting-techniques, specially used for large car shoots in giant studios.
