OK, I am bit confused over something I never thought I would be.

I have a Canon 30D shooting in RAW mode yielding approx 8mb files.

I import them into Lightroom as .dng's, process the images and then export them at 100% jpeg in order to upload to an agency that has a minimal requirement of 3mb jpeg files.

The resulting files are coming up too small!, like 2-2.8mb's

I cannot figure out how to make them any larger in Lightroom and it is hard to image that a 30D is incapable of taking an image that is large enough to be used as stock.

perhaps you're mixing up mb (megabytes) with mp (megapixels)? i presume your canon 30d is a 8 megapixel camera and you're trying to fulfill some stock agency's requirements for at least 3 megapixel images? in that case, replace mb with mp, and you're good to go.
