I'm curious how do easily replace background "skies" - does he just mask it and cut/paste? Wouldn't there be noticeable pixellation, or how do you compensate for that?

now it became much easier with photoshop Sky Replacement feature. Still it often requires tweaking, blending new sky with an original sky over the horizon, etc.
No, I don't have any pixelation, I strive for it to look perfect at 100% magnification.
