Hello,
Last night I submitted a photo I had been working with the main subject being an open bible. I already got a rejection from canstock for: "Image shows protected material, this could be a logo, or other copyright material." You could see SOME of the text of the pages where it's open but not a full page, can I not show any text in the photo from a book? If there is nothing that can identify the publisher, I would not expect it to be an issue. The Bible itself is public domain and I have seen tons of images using open pages of the Bible.

It maybe depends on country, but AIUI in the UK, only certain translations e.g. the KJV/AV, are PD.

I had a chunk of an illuminated manuscript (bible chunk) from who knows how long ago (pre 1800) rejected for the same reason.
