Hoping that someone knows why this architecture is used, still on some new one, or was originally used.
Some ideas are tower to observe trains coming or leaving. Signaling. Water tanks originally. All good guesses, but I'm still wondering if anyone knows the "right" answer?

first thought was it looks like some french chateaux, and similar to a lot of canadian railroad hotels:

our stations in Australia look nothing like that, although we don't have snow in most of the country so those super pitched roofs aren't common.

Good points. I'm not saying that all are like that, built around the turn of the Century, the last one, it seems like that was a popular style and characteristic of RR stations. I was hoping someone who knows something about architecture would have some ideas. The smallest one, late 1800s looks like a little ticket booth. The middle one is actually new within the last few years. Built in the old style. The big one with the two towers was from 1903.
I never thought about the snow, I thought maybe it was a tower for something else, or a particular style of the era? Now I see the European influences and it's even more intriguing. Many stations, the grand ones, have clock towers, which is something different. Chateau, that's interesting too.
Thanks for more ideas.

Seriously, you have some OCD or something about rules, regulations and laws. Whats track laws got to do with architectural turrets on trains stations?

Well let's see.
Since Railroads are private property then the Buildings also must be private property and even though you can shoot something on private property from public property the issue arises when you go to sell the image you have therefore you would need a "Property Release".

Did you even read the OPs question?? Its got nothing to do with releases or laws.
