So, in few days all our uploads must be above 4MP, is there anyway to just create a vector design in any size and then change the PPI (or something) to set this design above 4MP or i really need to change the size of everything??

You could probably make a script to increase the size, but Adobe programs are pretty bad at hording memory. So, it may crash out if you are working with a lot of large files. I guess you probably have to work in RGB as well because it doesn't seem like they'll make things work in CMYK. No idea on the keywording, since they never really announced a solution for that. Overall, I'd say no. There is no easy way. Maybe, a boycott and hope they switch it back is the easiest solution.

What would happen if you kept the actual illustration very small but placed it inside a large artboard? I haven't tried it.

It is not the measure of the artboard to be taken in consideration, but the measure of the illustration.
So you can make a big artboart and fill it with a big rectangle, letting your original illustration in the middle…

They kinda deserve to get a huge color or white field with tiny illustrations in the middle.

I think that they deserve that people stop to upload vectors for one month or two…
I will do that, but I am not a top vector designer so it will not have any effect if I am alone to do that…

I am also not a top contributor, but for sure I will only upload JPG versions of my vectors to SS and vectors to all other agencies hoping they will change back everything soon (and then I will upload my vectors too).
