Just do the theme update inside your WP admin area (Appearance -> Theme).
If you are on 2.6.X already then you can skip the theme update for now and just install the plugin.

In fact, I noticed that after when I uploaded the plugin, installed it succesfully and saw that is working. I thaught than that maybe is not necessary to install the theme too. Seems it works. My current Symbio is 2.6.5
Do you have an idea of how many items supports the Header Menu? Because I had a problem with it, I added too many items and I started to not see anymore the main items. When cancelled some of the subitems, the main items appeared again.

I tend to forget that not everyone has upgraded theme before, sorry.

For anyone else if this happens - you may have to select another theme - 2013 or something, delete symbiostock, install symbiostock , reinstall child theme (do not delete child theme)

Regarding the number of sub-categories.  I have no idea how many is the limit, I have quite a few    .  The number of main headings is limited by the space available, if you have too many they will spill over onto the next line.

The problem is, if I add even a subcategory in plus of the limit number, I start to loose , main items in the menu. They dissapear completely 
Doesn't matter, I removed all the third level subcategories. They are anyway visible in the Subcategories Map page.
